Low Carb Keto Butter Chicken



A creamy and flavorful Indian-inspired dish made with tender chicken cooked in a rich and spiced tomato-based sauce, perfect for those following a low carb or keto diet.

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons ghee or butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup tomato puree
  • 1/4 cup heavy cream
  • 1/4 cup unsweetened almond milk
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

In a large skillet, melt the ghee or butter over medium heat

Add the chopped onion and cook until softened, about 5 minutes

Stir in the minced garlic and ginger, and cook for another 1-2 minutes

Add the chicken pieces to the skillet and cook until browned on all sides

Sprinkle the turmeric, cumin, paprika, and cayenne pepper over the chicken, stirring to coat evenly

Pour in the tomato puree, heavy cream, and almond milk

Stir to combine

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through and tender

Season with salt and pepper to taste

Garnish with fresh cilantro before serving

Slow Cooker Summer Vegetable Soup



This slow cooker summer vegetable soup is light and tasty, and it's great for hot days when you want a healthy meal without making the kitchen too hot.

Ingredients:

  • 6 cups vegetable broth
  • 1 can 14 oz diced tomatoes
  • 2 medium zucchinis, diced
  • 2 yellow squash, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup fresh or frozen corn kernels
  • 1 cup chopped carrots
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions:

In a slow cooker, combine all ingredients except parsley

Cover and cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender

Taste and adjust seasoning if needed

Serve hot, garnished with fresh parsley

Peanut Butter Blossom Blondies



A delightful twist on classic blondies, these Peanut Butter Blossom Blondies combine the rich flavor of peanut butter with the sweetness of chocolate kisses, creating a perfect harmony of flavors and textures.

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 24 chocolate candy kisses, unwrapped

Instructions:

Set the oven to 350F 175C and heat it up

Prepare a 9x13-inch baking dish by greasing it

Melted butter, peanut butter, and brown sugar should all be mixed together in a large bowl

Mix until it's smooth

To the peanut butter mix, add eggs and vanilla extract

Mix everything together well

Mix the flour, baking powder, and salt together in a different bowl

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

Add the chocolate chips and mix them in

Spread the batter out evenly in the baking dish that has been prepared

Bake for 20 to 25 minutes, or until the edges are just beginning to turn golden and a toothpick stuck in the middle comes out clean

After taking them out of the oven, put a chocolate candy kiss in the middle of each blondie right away

Blondies should be left in the pan to cool all the way down before they are cut into squares

Striped All Fruit Pops



For hot summer days, these Striped All Fruit Pops are a fun and healthy treat. They're easy to make and fun to eat! They are made with a bunch of different fresh fruits and smooth Greek yogurt.

Ingredients:

  • 2 cups mixed fresh fruits such as strawberries, blueberries, and kiwi, chopped
  • 1/4 cup honey or maple syrup
  • 1 cup Greek yogurt
  • 1/4 cup milk

Instructions:

Using a blender, blend each fruit separately until the mixture is smooth

Mix the fruit purees well and then add the honey or maple syrup in equal parts

Mix Greek yogurt and milk in a small bowl with a whisk until the mixture is smooth

Alternate the colors of the fruit purees and yogurt mixture as you pour them into popsicle molds

Put a popsicle stick into each mold and freeze them for at least four hours, or until they are solid

To serve, run the molds under warm water for a short time to get the popsicles out of the molds
