Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1/2 cup mint chocolate chips
- 1/4 cup cocoa powder
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 1/2 teaspoon mint extract
- Green food coloring optional
- Whipped cream and additional mint chocolate chips for garnish
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners
In a bowl, whisk together the flour, baking powder, baking soda, and salt
Set aside
In another bowl, cream together the softened butter and sugar until light and fluffy
Add the eggs, one at a time, beating well after each addition
Stir in the vanilla extract
Mix in half of the dry ingredients mixture, followed by the whole milk
Mix until just combined
In a separate bowl, toss the mint chocolate chips with cocoa powder to coat them
This prevents them from sinking to the bottom of the cupcakes
Fold the coated chocolate chips into the cupcake batter
Scoop the batter into the prepared cupcake liners, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
To make the mint chip milkshake frosting, combine the vegetable oil, buttermilk, mint extract, and green food coloring if desired in a mixing bowl
Gradually add the powdered sugar and beat until the frosting is smooth and reaches your desired consistency
Pipe or spread the frosting onto the cooled cupcakes
Garnish with whipped cream and additional mint chocolate chips
