This Mango Black Bean Salad is a delightful combination of sweet and savory flavors. The mangoes add a tropical twist while the black beans provide a hearty and protein-packed element. Baking and broiling the mangoes enhance their sweetness, making this salad a perfect addition to any summer meal.
Ingredients:
- 2 ripe mangoes, diced
- 1 can 15 oz black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lime, juiced
Instructions:
Start by heating the oven to 400F 200C
Dice the mangoes, black beans, red bell pepper, and red onion and put them in a baking dish
Put cumin, chili powder, salt, and black pepper in a small bowl and mix them together
Pour this mixture over the things in the baking dish
Put the pan in a hot oven and bake for 15 to 20 minutes, or until the beans are hot and the mangoes are slightly caramelized
Take it out of the oven and let it cool down for a while
Add lime juice and fresh cilantro to the salad
Then, gently toss everything together
